Andes Peppermint Brownies w/ a Twist!



These were.....wait for it...

AMAZING!



Once the fudgy, gooey, minty, bliss enters your mouth you're enjoying a little slice of heaven. 


 After reading that you probably are thinking to yourself, "Man, I can't enjoy those (all though I really really want to) because fudgy, gooey, minty, bliss comes with too much guilt (approx 300 cals worth of guilt) which is not worth an extra half hour-plus at the gym."

 Well my pessimistic friend, 
I have some good news
 EAT AWAY. 

Because these amazing, friends, I mean AMAZING brownies are made with.....


 wait for it.... (Name that show)


 not oil, not butter, not eggs.....


 So what????? 


 BLACK BEANS!

 Gahhhh I know!

 "WHAT" you shout out loud.

 "YES" I say.

 Fibrous, delicious, healthy black beans. 

With the serving size of 10 *see picture below,
These brownies,without mint topping, run ~139 cals per brownie square, and 219 cals with mint topping.

I cut them  even  smaller and got ~20 brownies (108 cals with mint topping!!!!) because I was feeding a large group.

So with all that awesomeness being said: 

 Bake and be amazed.



Ingredients: 

Brownies 
1/2 cup white whole wheat flour
1/2 tsp baking powder 
1/2 cup cocoa powder 
1 cup granulated sugar 
1 can reduced sodium black beans (with liquid) 

Mint topping 
1/2 package of Andes Creme de Menthe baking chips 

Directions:

Preheat  350 F.
Line a 7x11 baking pan with parchment paper with enough parchment hanging over the edges to grab at--helps with removal.

In a food processor, first blend 1 can of beans with liquid, sugar, and cocoa powder until a creamy dark liquid. Then pulse in flour,salt, and baking powder.

Pour batter into lined baking pan and bake for 25 min. or until knife comes out fudgy not runny. (you'll know)

As soon as the brownies come out of the oven cut them to the size you desire. Then, evenly pour mint chips over hot brownies. As they begin to melt, take a knife or spatula and swirl around to make cool, minty designs. Then run your knife through the pre-cut slices again  to keep the brownies separate as they cool and the chocolate hardens:



Let cool for 10 min before placing in the fridge to harden chocolate more. 

To serve, let sit out for an hour or so to help cut through the harden chocolate layer--no cracks. ( I did think about per-slicing while the chocolate was still hot and that might do the trick to help prevent cracks...try it out and let me know what you think)

Turkey with Zucchini "Pasta"




So, have you seen those "make pasta from your veggies" machines? If not, Google them.
Some look really cool, others look like a gadget thought up on Star Trek.
But hey, neat idea.




For this dish however, I used the good ol' fashioned potato peeler. I didn't get uniform "noodles," but I did get thin cuts of zucchini that I sauteed in the pan to make a delicious base for my ground turkey and my husband's homemade awesome tomato sauce.

This dish can be whipped up in minutes and is super healthy, clean eating, paleo, and ready to be in your tummy.





Ingredients
makes ~2 servings
1/2 lb ground turkey
1 large zucchini
1 cup of your favorite pasta sauce
1-2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

Directions: 
Cook and brown your ground turkey in a skillet. Season with some garlic powder, salt, and pepper. Set aside.
Take your zucchini and hold upright on a cutting board. Using your peeler, stroke from the top of the zucchini to the bottom in a quick motion to produce "strands". They should be thin.
In another skillet, heat a little olive oil on medium heat. Add in created zucchini noodles and saute them for about 2 min--until they are fragrant and beginning to get some brown spots on them. Season with salt, pepper, and garlic powder as desired.
Heat up you pasta sauce.

Now place your cooked zucchini noodles as the base of your dish, then top with ground turkey and pasta sauce.
Mix it all up, and enjoy!

Feel free to sprinkle some Parmesan cheese, or crumble some croutons on top; No need to worry about calories with this "pasta" dish.

Avocado Tuna Melt

 


Simply delectable. 


This dish is a clean meal, so easy to prepare, full of protein, fiber, and good fats, and will have your mouth craving it's creaminess when it's gone.


I am not a seafood fan, but tuna? I love the stuff, especially warm and sprinkled with cheese.

Cut open that avo and get started.





Ingredients 
1/2 medium avocado
1 can of tuna, in water
1 cup of lettuce, chop
1/6 tsp garlic powder (optional)
shredded cheese
diced tomatoes
salt and pepper, to taste

Directions: 
Place a cup of chopped lettuce on a plate and garnish with diced tomatoes.
In a small bowl mix tuna, garlic powder, salt, and pepper. 
Gently peel avocado half.
Gently scoop out a bit of the center of the avo to make a larger hole.
Place mixed tuna inside the avo crater  and sprinkle with cheese.
place in a microwave save dish/bowl with sides to prop up the tuna filled avocado and microwave for 45 sec, or until cheese is melted.
Gently place heated tuna filled avo on top of the prepared lettuce plate.

The Mex-I-Can Casserole

 


Love Mexican themed food?--MEX 

Believe in yourself?--I  

Have some canned beans and corn? CAN  

(get the title now?)

 THEN MAKE THIS!


I've made this several times for group gatherings because of its simplicity and unbelievably short prep/cooking time.  So far everyone seems to really enjoy it.

10 min prep 15 min bake. Done. 

Feel free to double the batch!

Adapted from Panning The Globe
Ingredients: 
12 corn tortillas
1 can of rotel*
1 can of black beans--drained and rinsed (reduced sodium)
1 can of corn (no salt added)
1/2 onion, chopped
1 1/2 cup shredded cheese of choice (I used a mexican blend)
2 tsp garlic powder
1 tsp cumin
1/4 to 1/2 tsp chili powder (depends on your heat tolerance)
1 tsp salt
1/2 tsp black pepper

* any flavor of  or spice preference or rotel--I've made with original, mild, and lime!
* feel free to add in a hot sauce if desired.


Directions: 
Preheat oven to 350 F.

Lightly spray a 9x13 baking dish with a non stick spray of choice.
Layer 6 tortillas down in pan--is okay if they overlap and they bend up the side of the pan.
Mix rotel, black beans, corn, onion, garlic powder, cumin, chili powder, salt and pepper in a bowl.
Evenly top the 6 tortillas with half the mixture. Sprinkle 3/4 cup of cheese over the mixture.
Lay out another 6 tortillas on top of that and repeat, ending with sprinkled cheese on top.

Bake for 15 min, until cheese is melted and bubbly.

Cut into 15 portions or 9 if you want them bigger. 


Serve with some a side of your favorite salsa and guacamole!

Balsamic Pineapple Chops

Pineapple is a terrific fruit.
 It has a distinct sweet and tangy  flavor that really stands out to my palate.

I admit however, that I usually only bake with fruit, not cook with it. Now, I have make some amazing sweet and sour chicken with pineapple, and that was a huge hit; but to me, thinking about pairing meat and fruit together--no pun intended--just doesn't cross my mind when I think of dinner.

And I know, there are some pretty amazing dishes out there that add fruit to the main course--peaches especially-- so I hope this recipe can be the start of a new way of cooking for me.

To fruit!

Ingredients:
4 center cut pork chops,
1 tsp garlic powder
1/4 cup balsamic vinegar
1/8 tsp salt
1/8 tsp pepper
1/2 onion, chopped
1 can pineapple, diced

Directions: 
Trim any fat off the pork chops as desired.
Whisk together balsamic vinegar, garlic powder salt pepper, and chopped onion. Place the marinade in Ziploc back along with pork chops. Seal and then shake/mix everything together so that pork chops are well covered.
Let sit in the fridge for 15-30 min (this can marinate overnight, if desired)
Heat a large skillet on medium high heat.
Take out the bag of marinated chops and dump the entire contents of the bag into the skillet.

Sear each side of of the pork chop for 2 minutes so that each side has  a nice browned edge.

Reduce heat to medium low and add the entire can of diced pineapple along with juices over the pork  chops. Cover and let simmer for 15-20 min. (During this time you can make some amazing side  dish!)

Remove the chops from heat and let rest for 3 min.

Plate chops and top with extra juice from the pan and some pineapple .

Summer Apple Chicken Salad

Have a pita
Fill it with this, your taste buds will thank you. 



Something you may not know about me is that one food motto I hold strong too is anything "white" and/or "solid" generally at room temperate I don't allow into my diet. Food items in these categories include: mayonnaise, white bread, ranch dressing, butter (now, I'll bake and/or cook with it every now and then but you wont see me putting it on my daily bread), crisco or any cooking agent that is in that category, velveeta....(I still don't really know what it is, but sorry all you nacho lovers my cheese dip will NOT include that solid in a box "cheese"). 

So with mayo out, let's say hello to plain greek yogurt. The healthy, high protein, extremely versatile yogurt.  I chose to buy plain greek yogurt and then season/sweeten it up myself to keep as many preservatives out of my diet. So far so good! 
Check out this Greek Yogurt Parmesan Chicken: it will rock your world.

Now,
thanks to  The Gracious Pantry  I have been inspired to create yet another wonderful and easy to make work lunch. 

Bonus, it's high in protein, clean eating, and low in fat! Feel free to double, triple, quadruple as needed.

Ingredients: 
4-6 oz chicken breast
1/4 cup greek yogurt
1tsp garlic powder
2 tbs chopped red onion 
1/4 cup granny smith apple, chopped
1 tsp lemon juice
1/4 tsp black pepper
pinch of salt 

Optional: add chopped celery, exchange the apple for grapes, and/or add chopped nuts.

 
Directions: 
Shred/chop your chicken as desired. 
Mix everything together and....


Voila!

Healthy Spring Stir Fry

 

Yes, stir fry can be clean eating and healthy,



and best of all, be DELICIOUS!

I put this simple dish together in the morning for my lunch at work and was so pleased with the outcome. I could easily be doubled or tripled to feed more than one, and feel free to mix up the veggies and meat as desired. 


Recipe adapted from Skinnytaste
Ingredients: 
4-6oz chicken breast, cooked and cubed
1/2 cup brown rice, cooked
3tbs egg whites
1 large carrot, chopped
1/2 cup sugar snap peas
1-2 garlic cloves, minced
red onion, slivers
1-2 tbs low sodium sauce
1/4 tsp garlic powder (optional: I like garlic)
1/4 tsp pepper
1 tbs olive oil

Directions: 

Mix 1tbs soy sauce,  pepper, and garlic powder in a bowl.
Toss cubed chicken in sauce and set aside.
Heat olive oil in a small skillet over medium heat. 
Add onion and cook until partially translucent.
Then add minced garlic, chopped carrots, and snap peas and sir fry until veggies are tender.
Move cooked veggies to one side of the pan and add in the egg whites. 
Stir them until they scramble and then mix in with the veggies.
Mix the veggie-egg mixture with  the cooked rice and sauced chicken. 
Add another 1/2-1tbs soy sauce and toss it all together until well combined.

Whole Wheat Flax Pita Bread

 

I love pita bread.



I buy it every 2 weeks and fill it with all kinds of concoctions, my favorite being almond butter mixed with greek yogurt and honey, topped with half a banana. SO GOOD.

Any who, I went to go pick up my favorite heart-healthy flax and oat pita, but the store didn't have any!!! I was so upset. I looked and looked, and asked, and they looked, no luck.
So I figured, this just mean it's time to make my own.

I have several pita recipes booked marked, and most of them are the same, and pretty simple:  Flour, salt, yeast, and oil with maybe some sugar. 

I pulled up three of my favorite recipes (with pictures of course) and started to bake away.

Of course I used my bread machine to do the mixing, and of course I wanted to make my own recipe so I adjusted a few things, but they worked, poofed a little--I think its because I used a stone ground whole wheat--harder to break down--, and are ready to devoured.


Ingredients: 
3 cups whole wheat flour
1 tsp salt
2 tsp active yeast or rapid rise yeast
1 tsp honey
1 tbs coconut oil
2 tbs flax seed, ground
1 1/4 cup water, divided

Directions:
bread machine, dough cycle. add water if dough is not sticking together after 4 min or so.


preheat 450 F.  with pan in the oven.
pull out onto floured surface. separate into 8 balls.
roll out into thin disks.


Flip disks on pan and bake for 3 min until poofed

place and cover with a clean towel and while you cook the rest.






You may have to gently cut into the pockets if not all parts poofed up.

 P.S. These will last about 3-5 days in THE FRIDGE and about 2 months in the freezer. DON'T LEAVE THEM OUT, they mold quickly...I learned that the hard way.

Autumn Apple Chops



It's not Autumn, it's actually Spring,
 Well sorta. 
We are stuck in this Winter trying to be Spring, 
oh yeah and its the first week of May
This mid-west weather is crazy. 

Anyways, why Autumn Chops?

Well, I bought the pork chops and it came with a recipe; This recipe, title and all.

Could it get any better?

Why yes, as a matter a fact this meal takes 5 min to prep and 10 min to cook for a total of a 15 min meal.

So Thank you pork chop packaging company. You made my dinner meal planning a little easier this week so I'll post your recipe and use your tile. Thank you!



Ingredients: 
Serves 4
4 pork loin chops. 3/4 inch thick
1 tbs flour
2 tsp butter
1/2 onion, sliced
1 cup apple juice
salt and pepper, to taste

Directions: 
Heat a skillet over medium heat.
Drizzle a little olive oil and saute sliced onions until they become translucent. Set aside. 
Season flour with a little salt and pepper.
Lightly flour pork chops and brown on one side in butter in the same skillet over medium heat.
Turn Chops;stir in onion and apple juice.
Bring to a boil, lower heat, cover and simmer for 7-8 min until internal temperature on a thermometer reads 145 F. followed by a 3 min rest time.

The Sweet Potato Soup





This soup was created through the taste as you go method; 
One of the best ways to cook in my opinion.


And let me tell you this soup is unbelievably good.
No joke. I have witnesses....about 8 who ate it with me with praises to go around.

I've had the idea for a  sweet potato soup since last fall, when all the creamy potato soup recipes popped up, since sweet potatoes have more health benefits such as:

  •  Vitamin A, C, B-6 and potassium, 
  • High fiber 
  • Lower glycemic index
  • Like most vegetables, they're fat-free and relatively low in calories — one-half of a large sweet potato has just 81 calories.   (Mayo Clinic, Live Strong)
Why wait so long to make the soup, you may ask? 
Well I was waiting for an immersion blender to come into my possession, and it did thanks to by brother-in-law Franky for my birthday!
This is a kitchen tool is amazing!!! Seriously. Cream or whip anything in its own container/pot.  Genius!
If you don't have an immersion blender don't worry you can blend this via a normal blender, or food processor. 

Ingredients: 

serves 6-8
4 large sweet potatoes, peeled and roughly chopped
1 tsp cumin
1 tsp chili powder
1 tsp cinnamon
2 tsp garlic powder
1 tbs onion chopped
salt and pepper to taste
2 cups veggie stock
2 1/2 cups water


Directions: 
Place vegetable stock and water into a pot and bring to boil.
Once boiling, add sweet potatoes and seasonings and Bring to a simmer
Simmer for 15-20 min. Sweet potatoes should be softer at this point.
Use your immersion blender and  begin to cream potatoes. 
It may take a few good pulses with your blender to get the creaminess going.
Once creamed let soup simmer for another 15-20 min. 

Serve warm

*if your using a blender, cook potatoes in stock for 30 min on a simmer. Then let cool for 15 min before transferring to a blender or food processor to cream. Return creamed potatoes to pot and bring back to high temp to server.

Apple Hand Pies


PIE...

The delicious baked dish that can hold in itself a savory meal or a decadent dessert. 

Pies were historically created as an easy storage and carrying method of cooking--The first pies were actually called "coffins" or "coffyns" (the word actually meant a basket or box).--Pie History 


In this case I wanted to make something even more mobile, 
a pie you could hold in your hand, 
something you could easily mingle with, 
something you could pair with a nice cup of tea,
 or a smooth sip of coffee; 

I give you the hand pie.



Recipe adapted from Just a Taste 
Ingredients: 
Dough
2 cups flour
1/2 tsp salt
1/2 tsp baking powder
2 tsp sugar
3/4  cup coconut oil, solid, divided
1/4 cup butter, cubed
1/2 cup plain greek yogurt

 Apple Filling
2 cups granny smith apples
1 tsp cinnamon
2 tbs sugar
2tbs flour
2 tsp lemon juice

Egg wash
1 egg  +1 tbs water


Directions:
Pulse flour, salt, baking soda and sugar together. Add coconut oil 4 tbs at a time and pulse until flour starts to crumble. Pulse in cubed butter. Add in greek yogurt 4 tbs at a time and pulse until mixture is wet and quite crumbly .

Dump onto a floured surface. Fraisage the dough together and then kneed 5-8 times. Roll into 8x10in rectangle. Dust top with flour and roll into thirds--like a coil.


Turn 90 degrees and roll out dough again into an 8x10 rectangle

Fold again into thirds and then tightly wrap in plastic wrap and refrigerate for 30 min. (you can store in fridge up to 5 days if making ahead of time)--if you are pressed for time you can refrigerate for 10-15 min, just to get a  solid form.

Preheat oven 425 F.

Once set for 30 min in the fridge, remove from fridge and let sit on counter for  10-15 to soften a bit. Roll out into ~12x12 to 14x14 square.

Using a 3in biscuit/cookie cutter and cut out as many circles as possible; molding and re-rolling out the dough as needed.

Evenly space out dough circles on a parchment lined baking sheet.
Spoon about 1 tbs worth of filling into the center of the circle and top with another circle.



Seal edges with a fork--don't be afraid to push down on the top circle and apply a good amount of pressure to seal because these puff up quite a bit!

Brush each pie with an egg wash, and using a sharp knife slice air vents into the tops of the dough.

Sprinkle with a little sugar, if desired, and bake for 15 min, until tops are a golden brown.

Let cool for 10 min before serving.

Zucchini Blondies



"Blondies" are lighten-up brownies.

 Honestly, I prefer brownies 
because they're pretty much a gooey chocolate bar, 
but hey, 
anything that is sweet and in a "bar" form 
is fair game for my palate. 
Now these ones are like blondes who got a tan,
 because they are made with whole wheat flour. 
Plus they are healthier than the typical butter and sugar filled babes, 
I mean, 
bars,
 so take your sun-tanned "Blondie" and enjoy it in a bikini.

***Yes it is march, it's still snowing, and I am thinking about swim suit season--
Oh the life of a California girl stuck in the mid-west. (it's really not that bad, but I can dream!)***

Recipe adapted from Webicurean.com

Makes 15 bars
Ingredients: 
2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1 egg
3/4 cup unsweetened applesauce
3 tbs coconut oil, melted
1 tsp vanilla
2 tbs water
1/2 cup brown sugar, packed
2 tbs sugar
2 medium-small zucchini's, peeled and chopped



Directions: 
Preheat oven 350 F. 
Non-stick a 7x11 or 9" in pan. 
Whisk together applesauce, coconut oil, sugar, egg, vanilla, and cinnamon until smooth. 
Sift together flour, baking soda and powder, and salt together. 
Blend well together the wet mixture into dry. 
Fold zucchini into batter, it will be thick. 

Evenly pour mixture into pan and if desired, sprinkle 1-2 tbs of brown sugar on top. 
Bake for 25-30 min-or until knife comes out almost clean--you don't want to over bake it. 

Let cool for 10 min. 
Slice and serve.

Turkey Meat Balls: Protein Packed!

Well I am starting the Jamie Eason, Live Fit 12 week challenge and this is one of her recipes. 
I am not following the challenge's  meal plan to a 'T,' but I will use it as a guideline. You can read more HERE.

One of her recipes are turkey muffins, which are generally used as a snack in between meals. Her's are HUGE--large racquet ball size--and women are asked to eat 2 as a snack.
Can you imagine pulling that out as a snack at your desk.

Anyways, I made my own version, a bit smaller, and they are still packed with protein and will serve me just well for the time being.

They are delicious on there own but you can serve them with some type of sauce, cut them up and top on a salad, or put them in a sandwich. Endless possibilities.


Ingredients:
1 lb lean ground turkey ( I want to use extra lean but couldn't find it that week, it will cut calories)
1/4 cup rolled oats
1 egg
1/4 cup onion, chopped
2 mini peppers, chopped
1 small zucchini, grated
1 tsp chili powder
1 tsp cumin
1/2 tsp ground mustard
1/2 tsp garlic powder
1/4 tsp red pepper flakes,

Directions:
Preheat oven 375  F.
Non stick a muffin tin
Mix everything together in a small bowl-use your hands!
Do not over mix the meat but mix enough to get every thing incorporated.

Roll mixture into 12 equal sized balls, place in muffin tin and bake for 40 min.

Serve on a salad, in a pita, on some spaghetti squash, or just eat them---they taste great with hot sauce!

LiveFit Phase 1 Day 1

 

Well I did it. 
Day 1 complete. 
It was not as easy as I thought it was going to be. 
Honestly, I thought 3 sets of 12 per exercise, I got this. 
However, by the 3rd set for a few of them I was literately falling on my face (Narrow push ups). 
Now don't count me out yet.
I did have a few great sets: tricep pull downs and bench press were completed with ease and in total I lifted 4,140bs in an hour. 
Not bad, not bad at all.

So here were the workouts and my numbers: 

Wide Push Ups: 3 set
My body weight x 36

Narrow push ups: 3 sets OUCH!
my body weight x 36

Dumbbell Bench Press: 3 sets
20x12 each x 36

Flat Bench Cable Flyes: 3 set OUCH!
20x12; 15x12;  10x6 + 15x6

Standing Dumbbell Triceps Extension
20x12 each

Tricep Pull down
60x12 each


I'm in this, and still have the newbie adrenaline.

As for the food, I've stated in my intro to the challenge that I am using her meal plan as a guidline for my diet. And even though I upped my calories to 1400 I couldn't eat that much!
 I got myself to 1300 but man I was so full!  
Mostly because I ate a TON of protein: 130g. when my normal was around 75g. 
I know it's important to eat a lot in this first phase to help with muscle building so I will keep it up  and eat...fun concept right! 

Here was my meal layout for day 1:

Breakfast: Protein Shake:
--Body by vi, with water and 1/2 tsp mango pineapple drink mix (great value), 1/4 cup frozen strawberries
      104 cal; 12g protein 
  
Snack: 
--1/2 cup plain greek yogurt with cinnamon, 1 truvia packet, and 1/2 tsp vanilla and 1 hard boiled egg
       136 cal;  17g protein

Lunch: Turkey roll ups
--6 oz of mesquite turkey breast with 5 cherry tomatoes, 1/4 cup sliced cucumber, 1/2 cup brown rice, 1 tbs spicy brown mustard 
       315 cal;  37g protein

Snack
2 turkey balls, 2 sweet peppers, sliced carrot, and celery   
     265 cal; 20g protein







Dinner: Chicken Pita

5 oz shredded chicken breast in sauce: 1 tbs spicy brown mustard 1 tbs greek yogurt, pepper, 2 sliced cherry tomatoes,  1 cup chopped romaine lettuce, 1 Joseph's whole wheat pita 
      181 cal; 30g protein


 
Snack: 
~1/2 cup greek yogurt; 1 tbs peanut butter; 1 Truvia packet; 1 tbs cocoa powder--DON'T DO THIS, WAY TOO MUCH I couldn't finish it.
          ~ 131 cal; 12g protein
