Zucchini Tots

Another great snack. 
Seriously. 
These were delicious!


If you like tater-tots, I am sure you will like zucchini tots. 
Tons of flavor and much healthier.

My only regret, not making more. I ate all of them.

So double this baby and enjoy!

Ingredients:
1 large zucchini
1 egg
1/4 cup  bread crumbs, any flavor/season/type
1/4 cup reduced fat Parmesan cheese, grated ( I used kraft)
1/4 onion, chopped
1/4 tsp garlic powder
salt and pepper, to taste

Directions: 
Preheat oven 400 F.
Non-stick a mini muffin tin.
Grate zucchini into a cup. Place in a clean dish towel or paper towels and pat dry (helps crisp tots).
Mix all ingredients together in a bowl.
Spoon approx 1 tbs into each mini muffin tin compartment.
Spray tops with a little cooking spray --I used my misto filled with olive oil.

Bake for 15-20 min until mini tots are golden brown all a round.
 
Serve with some marinara sauce or salsa.

Healthy Cheesecake Pudding Cookies



Hubby LOVES anything Cheesecake flavored. I had Cheesecake flavored pudding. So I made cookies! Healthy ones!

Ingredients
  • 1/2 cup wheat flour
  • 1/2 cup white flour
  • 2/3 cup sugar
  • 1/8 tsp salt
  • 1 pkg SF/FF cheesecake flavored pudding
  • 1/4 cup butter (I used parkay)
  • 1/4 cup unsweetened apple sauce
  • 1 tsp vanilla extract
  • 1 large egg
*optional: 1/4 cup dried cranberries.

Directions

Preheat oven to 350

Mix dry ingredients in medium bowl. Mix wet ingredients in small bowl. Blend wet ingredients into dry.
Spoon out dough (about 1 tbs) and place on baking sheet.

Bake for 8-10 min, or until cookies have golden edges.

ENJOY!!!!

p.s. I like the dried cranberry ones better, but both were SUPER fluffy and delicious! :)

Healthy Baked Okra and Green Beans



 Eat your veggies...


 

  • 4 oz fresh okra, chopped.
  • 4 oz fresh green beans
  • 2 eggs or 4 egg whites
  • 1 1/4 cup bread crumbs (I used plain panko but there are so many others and seasonings)
  • Paprika to taste
  • Italian seasoning to taste
  • Salt and pepper to taste
  • 1 tbs cayenne pepper, or chili powder, or cumin, or red pepper flakes, or all!
Directions:
Preheat oven 425 degrees

In one bowl mix bread crumbs and all seasonings and spices. In another bowl whisk eggs. Set aside.
Fill another bowl with ice water and set aside.
Bring a pot of water to boil.

While waiting for boil, cut okra into 3rds of 4ths depending on size. Cut the ends off of green beans.
When boiled water is ready place green beans in for 2-3 min. When done submerge into ice water and dry on a paper towel.

Dip okra and green beans into egg mixture, shaking of extra and then into bread crumb mixture.

Place on a aluminum covered baking sheet, making sure none are touching each other.
Bake for 15-20 min until browned edges.
