Cinnamon Raisin Bagels

Thank you to the Great British Bake Off for inspiring my husband I to make these delicious bagels.
They are so easy to make.

Simple ingredients.

Albeit weird to make,
they are delicious!

These are definitely something you should try to make at least once in your life.
Oh and they freeze well!

Ingredients:
Makes ~8 bagels
13 oz bread flour
2 1/2 tsp active dry yeast
1tsp salt
1 cup warm water
2tbsp brown sugar
1tbs sugar
1 1/2 tbs cinnamon
1tbs honey
2/3 cup raisins, soaked in warm water
1 egg, beaten

Directions:
Mix yeast, water and brown sugar together. Bloom yeast for 5 min.
Mix flour, salt, cinnamon together
Add flour mixture to yeast mixture and while mixing on low with dough hook, add honey. Beat for 3 min low, 1 min fast.
Add raisins, best 2 min slow.

Place dough in large, lightly oiled bowl, let rise 1 hour/double in size, covered. Punch down.

Bring large pot of water to boil, add regular sugar when bubbling.

Preheat oven 400.

While waiting ,
Divide dough into 3 oz. roll 10 inch log and over lap ends and pinch hard to close.

Boil 1 min on one side, flip
Boil 1 min on the other.

Place on prepped baking tray and brush tops with beat egg.

Bake 15 min one side, flip bake 12 min the other.

Cool on drying rack.

Enjoy!
